But if you don't have time for a long drive and you only got a weekend available, there's a resort within the city that is great for an overnight or two getaway. Palmas Del Mar is located in JR Torres Avenue in Bacolod City. A five-hectare resort facing the sea surrounded by lush green vegetations.<br />
My brother tagged me along to Palmas Del Mar last Saturday evening to join them for an overnight stay together with his high school friends. I haven't been there for so long so I decided to go with them. It was 7:30 pm when we arrived. The swimming pool as teaming with overnight stayers and even the billiard tables are occupied. They had booked the Costa Dorada family room in Iberian-their newest hotel. It had a queen size bed, 2 single beds and a pull-out on one single bed, a 50 inch flat screen plasma tv with cable service, a phone, a dvd player and hot and cold shower. What's nice is that it is 20 steps away from the kiddie pool which is adjacent to the big pool. You can watch your kids swimming while having a drink on the rooms front porch.<br />

</div> After dinner we decided to take a dip on the pool and enjoyed the warm water on the pool for over an hour. Swimming pool is open until 11:00 pm. It was almost 11:00 when one by one we hit the bed, the boys had their chit chat while drinking beer and I enjoyed watching movies on HBO. It was past four in the morning when I decided to get some sleep. I woke up early, went around the resort and took some photos. Their garden setting is perfect for weddings, debut, birthday and any special occasion. When I got back to the room, we ordered for breakfast. I had an English breakfast set while they have their all time Filipino breakfast. The breakfast was mouth-watering except for the overripe pineapple that we did not ate. The whole resort has WIFI so I spent the rest of the morning checking my facebook and emails.<br />

They have already come this far and wishing them to reach 50th. Then probably they might want me to make their golden anniversary cake hehehe.</div><div class="separator" style="clear: both; text-align: justify;"> This cake is made from carrots with ground cinnamon, crushed pineapple and raisins. I used raw sugar (we called it here Mascubado) because of its not too sweet and the vitamins and minerals are still present on it.While it is in the oven, the whole house smells like a combination of everything... smells heavenly! It made my mouth watery and want to take a bite from it. I guess the neighbors are drooling over the sweet scent on the air coming from the oven. The icing was made from cream cheese, a little of butter, vanilla, lemon and some confectioners sugar so the taste isn't too sweet... just the right amount of sweetness.</div><div class="separator" style="clear: both; text-align: justify;"> I delivered the cake personally to her parents. They already moved to Talisay City so I have no idea where to find them. Good thing I'm familiar with the subdivision and there were only few houses. The address says block 5 and I find myself asking for direction in block 18... Gosh! Thirteen blocks away. I laughed at myself thinking why I haven't asked someone in the guard house. Then I remember, there's no one in the guard house. I was texting Corrie who's in Aussie right now asking for directions. Luckily, someone pointed to me about a new house being constructed and when I got there I saw Corrie's father. Her mom let me in to their new house. A cute modern bungalow type house with wide space for gardening but the place isn't finish yet. Have a chat with her mom like 30 minutes or more before going home then call it a day. </div><div style="text-align: justify;"><br />

May 1, Labor Day, while the the whole country are having an annual celebration held to honor our Filipino workforce, La Carlota City's drumbeats roared across the whole city as they once more celebrated their annual Pasalamat Festival. <br />
We left Bacolod City around ten in the morning, our destination is the City of Lights, La Carlota City. Also called as the Drumbeat City of Beauty and Dance, La Carlota City is about 45 kilometers away south of Bacolod City. By private car, the city can be reached within 45 minutes and an hour by public utility vehicles. There are only 2 minibus companies that operates the Bacolod-La Carlota route - OMC and SDL.<br />

</div> We arrived a few minutes after 11:00 and went straight to a friend's house to have lunch. Stayed for a couple of hours chatting with some friends to keep up with the lost time and to update each others whereabouts while waiting for the rest of the company to arrive. It was almost 3:00 pm when we went out to the street. The main street was already packed with cars parked on the side and people waiting for the street parade to begin.<br />
It was past 3:30 when the sound of the drums filled the air combined with samba steps on the crowded street turned the whole main street of La Carlota into a mardi gras. One couldn't help but move or sway to the sound that emanated from the beat of the drums coming from the different beaters accompanying each of the 21 competing tribe. Garbed in elaborate and colorful costumes, the dancers of each tribes displayed gracefulness in spite of the scorching summer heat.<br />

It was gloomy that afternoon and the shade of the trees on the street made it hard for me to get good photos. But still, I managed to get some decent photos using the point and shoot camera. We positioned on the starting point of the parade and it was very tiring standing on the street for almost two hours, each tribe was like 50 meters away from each other. Maybe they don't want the street dancers to get confused if the drum beats from one tribe to another got mixed. But in total, it was a new and great experience for me.<br />

</div> This simple cake made of orange chiffon frosted with boiled icing and decorated with sugar flowers is for my newest goddaughter Meriah Hazel. This isnt my first time to make boiled icing but all failed in the past. It always gave me headache wondering what went wrong. Makes me think that the problem must be with the ingredients, my sugar must not be ready yet, the procedure or is it because I'm only using an electric hand mixer. My first try with boiled icing was a total failure. It icing became runny after I put colors on it, even if I'm using a gel color. And the colors sink to the bottom after a few minutes. Then the next one, I overcooked the sugar which makes the icing crunchy, with solid crystals on it. My third try was kinda alright. It has the perfect firmness but after I put colors on it, it became a little bit soggy. This is my fourth try, its not perfect because I was in a hurry and the sugar wasn't ready yet. With more practice I think I'll be able to do it perfectly next time.<br />

Minuyan, Murcia. After several days of fasting and observing the season of lent, Easter Sunday would be the perfect day for a celebration and family bonding. This isn't our first time to be here and as a matter of fact this place is very close to my heart. This is where Ruel realized his true feelings for me.</div><br />

</div><div style="text-align: justify;"> Mambukal Mountain Resort is 1,200 feet above sea level and serves an an entry or gateway to mountaineers who wants to climb Mount Kanlaon. From Bacolod City, it is 20 to 30 minutes drive by private car and 30 to 45 minutes by public utility vehicle. There are plenty of PUV's plying the Bacolod-Mambucal route and their terminal is located on the south portion of the Libertad Public Market. Transportation fare is somewhat between Php 35-40.</div><a name='more'></a><br />
<div style="text-align: justify;"> We arrived in Mambukal around 9:30 in the morning, as expected the entrance gate was already lined up with cars waiting to get in to the resort. Entrance fee is Php 15 for the adults and Php 10 for kids and we also paid an additional Php 15 for the car. I'm not surprised since its Easter Sunday. Good thing Papa had booked us a daytime cottage a week earlier so we're not worried about not getting a decent cottage. I was impressed when we spotted our cottage, it had a small whiteboard attached on the beam with our family name written on it. We rented the daytime cottage for Php 300.</div><br />

<div style="text-align: justify;"> After eating, Ruel and I decided to wander around the resort. We revisited the Sulfur Spring, had a 30 minute boating in their lagoon and trek to the seven falls. On our way up, we took the usual trail for the visitors, we were halfway between the 5th and the 6th falls when we decided to stop. It was very very tiring due to lack of sleep and rest from having to prepare everything a day before. And I keep on reminding my self not too tire myself too much. I still have to prepare a cake that night for a baptism that I will be attending.</div><div style="text-align: justify;">Ruel and I had a short dip on the river. The water was good for my aching body but Ruel said it's so cold that made him shiver to the bone. </div><br />

Last Saturday, Mheck, a friend of mine from call center days asked if we wanted to hang out with her in a beach. She did not only invited me but some of our friends from Uzzap days also. The nearest beach destination within the city is the Puntatytay where several beach resorts could be found.<br />

</div>This is Paraiso Beach Resort, one of the several resorts in Brgy. Punta Taytay in Bacolod City. It has several like "fifty" day time cottages or more lol. Some are small and there are others that can accommodate large groups. For only Php 100 - 300, you can rent the cottage hut till midnight. Entrance fee is only Php 5.00 for adults and if your coming in a large group children are sometimes free.<br />

</div>Getting there is not a problem. There are public vehicles or jeepneys routed Central Market to Punta Taytay. Just ask the driver if they can take you to the beach. Jeepney fare is Php 15.00 from downtown area to the beach resort.<br />

Pandan plants thrive abundantly on any types of terrain of Calatrava. These elongated succulent leaves with thorns on the sides are then cut, trashed into strands, hang dried and then made into durable material for mat weaving which became lucrative livelihood for the town' folks.<br />

An annual celebration held in Panaad Park in Bacolod City. Panaad which means "vow" or "promise" is a form of thanksgiving for good life and good harvest. Participated by 31 towns and cities that composed the province of Negros Occidental and for this it is called as the "mother of all festivals".<br />

</div><div>The 18th Panaad sa Negros Festival kicked off last Monday afternoon, April 4, headed by the governor and officials of different cities and municipalities. The highlight activity of that day was the festival dance competed by 24 groups which showcases each town's and city's unique festivity. Luckily, I was able to witnessed this extravagant showcase of colors and gracefulness. This week long celebration will commenced on April 9, 2011.</div><div><br />

From side street vendors to well known and high class restaurants or malls, in short business is in boom during this time.<br />
After watching the dance competition in the plaza, Audz and I went around to look for some bottled water to quench our thirst. As we go around, we were fascinated by these local street foods in their little push carts that we commonly called. This remind us of our childhood days how this street foods put smiles on our face every time they passed by in front of the house or after school hours.<br />

</div> March 21, 2011 marked the date for the 13th Kadalag-an Festival in the city of Victorias. A small city in the north of Bacolod. It is celebrated together with the city's Charter Day to commemorate how the town struggled to achieve its status from being a municipality to being a city.<br />
Kadalag-an or "triumph" depicts the hardship and the victory of the local people in facing the challenges of life. Every dance steps and every moves told a story about their harvests and what they do for their daily living.<br />

<a name='more'></a> I woke up 6:30 in the morning trying to figure out what or who disturbed my peaceful sleep. Then I heard my phone rang and saw a familiar name of the caller, I immediately answered the call and the person on the other line asked me if I had left the house already. Suddenly I remember I had a 6:30 call time to meet Audz, today is the day that we will go to Victorias. Half awake half asleep I ran to the bathroom, take a shower, dress up then left home. It was almost 7:30 when I arrived in our meeting place, ordered something to eat, hurriedly gulped my pancake, shared the remaining spaghetti that Audz ordered then we head off to our destination.<br />

It was gloomy when we arrived 15 minutes past 8:00 A.M. inVictorias city. We joined Eric's group after we spotted them in the assembly area. A few minutes after the parade kicked off, the rain started to pour down heavily. Me and Audz brought out our own umbrella. LOL. Despite the downpour, the dancers never left their post.<br />

It was almost 9:30 when we entered the city's pubic plaza where the final judging area is. Good thing we were able to get a good spot to take photos. After being drenched in the rain, the whole time we were in the plaza, the sun didn't failed to burn our skin. It was too hot that even my camera froze and I have to remove the battery to restart it.<br />

We left the plaza after watching the 9th group compete. It was already midday and the scorching heat of the sun burned through our skin. Even though we were not able to see the remaining four groups, I can say that the Kadalag-an Festival street dance was truly a blast. Another local festival that is truly world class. Coined from the word "sigay", a white hard shell abundant on the shoreline of Sagay.<br />
<div> Together with Audz of lagawan.com, we headed to Sagay City on a gloomy Saturday morning. I had breakfast over at their home before proceeding to the Vallacar Transit, also known as Ceres north bound terminal in Shopping. We decided to take the economy bus instead of the aircon bus bound for Escalante. After a few minutes after 10:00 A.M., the bus left the terminal and we're excited to get to Sagay City by noontime. Economy bus fare to Sagay is Php 75.00.</div><div> It would take two and a half hours travel time and pass by six cities and municipalities from Bacolod to Sagay City. Audz slept almost half of the travel time while I was enjoying the countryside scenery. The bus had several stop overs that made our travel time to almost three hours and my rear end started to complain when we finally arrived in Sagay City terminal.</div><div> We had to make a short trip to the restroom before we start our quest to look for a place to eat. Our hungry tummy brought us to Tali-ambong Food Festival Village. A gym turned into several food stalls to satisfy your hunger for local delicacies. We had grilled pork liempo and chicken liver for lunch.</div><div><br />

We waited for him to finish his lunch then head to the streets for the street dance parade.</div><div> There were thirteen tribes who joined the street dance competition dancing to the beat of the drums. This years celebration was focused on the preservation and protection of the environment. Costumes are made from recycled materials.</div><div><br />

I think the local tourism office needs to put more attention on how to improve the street dance competition because its the highlight of the said festivity. </div><div> After taking some photos we decided to head back to Bacolod City. We wanted to check the Vito church and the Museo Pang Bata but we don't have much time left. Ruel's second cousin will be celebrating his 21st birthday today and they requested if I can make them a simple chocolate birthday cake.<br />
I don't know why I'm so addicted to chocolates, chocolate candies and bars, chocolate drinks and lots and lots of cakes with chocolate as one of its ingredients.<br />

The filling is a vanilla pudding made of egg yolks, milk, sugar, cornstarch, butter and vanilla.<br />
For the frosting, I used Bensdorp cocoa, condensed milk, evaporated milk and butter cooked for several hours in a double boiler until it thickens in spreading consistency. This is a very tedious job and next time i'll try cooking it in a heavy saucepan to lessen the cooking time.<br />
And my chocolate icing needs more time cooking because after a few minutes of pouring it on the cake, the icing started dripping on the sides leaving the top portion with a very thin coat. Good thing I didn't pour everything on the cake so I return the icing on the stove.<br />
Not much on the presentation, just star shape candy sprinkles. I just hope that they would like the taste. This is my first non fondant birthday cake and I hope that I can also make a cake with boiled icing but I think I need to practice more on making boiled icing. More egg white and sugar to waste (sigh).<br />

And first day's should suppose to start right but not for me. It's like me against the world or the world plotting everything against me. Everything that you have done are not right and people just start to criticize you, put you down and make you feel so useless. And when you feel like the heaven is about to fall on you, the sky started to pour heavy rain showers which made you feel more hopeless and miserable.<br />

Life ain't fair. And it ain't easy as well. If you go with the flow because that is what everyone is doing or everyone is telling or expecting you to do, you'll just stuck up on it with no where to go. That's it--stagnant. Yet you are hearing praises for being a good follower but are you contented? You might answer "yes" but happy, fullfilled? At the end of the day you're just like a half-filled bottle. Will never be and always never be filled to the brim or overflowing. Let's say you decided to go on your way and be different from all the rest. Instead of getting support and understanding, all you can get are tons and tons of discouragement from people whom you least expect. Then you will start to feel depressed, deprived and eventually misery starts to sink in that if you cant handle it you might find yourself one day talking to your own self. When insanity steps in its the end of your life.<br />

But hey! Some people would always say look on the bright side. But where is that brighter side when the your distant future looks so gloomy and blurry. The road to happiness is winding and long with bloodsuckers scattered along ready to suck the life out of you anytime you showed weakness. If your on your quest to freedom and happiness just continue doing it your way. If you think that you're doing the right thing then there's no need to fear. Once in a while you might stumble and fall or most of the times but all you got to do is pick up your self and continue with what you are doing. If it makes you happy then go.<br />

Success isn't measured on the number of achievements or the amount of money in your bank account it's on how happy you are with your life and what you are doing.<br />

Save Sum-ag River Movement Dinner for a Cause is a fund raising drive of the school to aid The Knowledge Channel Program in their quest to restore the Sum-ag River.<br />
The night kicked off with a prayer from the students of SES then followed by a speech from the Vice Mayor of Bacolod Jude Thaddeus. A short overhead projector presentation of mission and vision of Save Sum-ag River Movement and the rest of the evening with special numbers of the SES teachers and staff.<br />
